The Biscotto stone is crafted from a unique blend of volcanic clay and volcanic ash, known as pozzolana, which is primarily found in the Campania region of Italy.
There are important differences in how Biscotto stones are made and in the quality provided by different manufacturers.
The ITALX Biscotto stones, which offer superior performance and results for pizza baking, are made by hand by Italian artisans, without the use of machine presses. This traditional method preserves the natural air pockets in the mix, enhancing the stone's heat retention and ensuring a more uniform heat release during cooking.
Please be aware that a handcrafted Biscotto stone has rough edges and only one smooth side, and the smooth side may have imperfections.
Due to manufacturing tolerances, actual dimensions may be 1/4–3/4 in (≈6–20 mm) smaller than the stated size or the original stone.
The Artisan Biscotto stone is also thicker than the original cordierite stone
